How to keep your cashews fresh for longer

24 Sep 20263 min readBy Santhosh Foods

A few easy storage habits help cashews keep their creamy taste and satisfying crunch for months instead of weeks.

Cashews are rich in natural oils. That is exactly what gives them their creamy taste and buttery bite, but it is also why they need a little care. Oils slowly react with air, light and heat, and when they do, the nuts lose their freshness and can eventually turn stale or rancid. The good news is that protecting your cashews takes very little effort once you know the basics.

1. Airtight is everything

Air and moisture are the two biggest enemies of a good cashew. Once a pack is opened, the original packaging is rarely enough to keep them out. Transfer your cashews to a clean, completely dry container with a tight-fitting lid. Glass jars and steel containers with rubber seals work very well. Avoid containers that have held strongly scented foods such as pickles or spices, because cashews absorb smells easily.

2. Keep them cool, dry and dark

Heat speeds up the changes that make nuts go stale. Store your container in a cupboard that is away from the stove, the oven, the microwave and any window that gets direct sun. In a hot, humid climate, a kitchen shelf next to the cooking area is one of the worst places you can choose, even though it is the most convenient.

3. Dry hands, dry spoons

A single drop of water or a damp spoon can introduce moisture that makes cashews soft and encourages spoilage. Always use a dry spoon or dry hands when taking cashews out of the container, and close the lid straight away.

4. Buying larger packs? Use the fridge or freezer

If you buy a 1kg pack or more, or you simply do not get through cashews quickly, cooler storage makes a real difference.

  • Cupboard: fine for a pack you plan to finish within a few weeks.
  • Fridge: keeps cashews fresh for several months. Use an airtight container so they do not pick up fridge smells.
  • Freezer: suitable for even longer storage. Divide into small portions so you only thaw what you need.

When you take cashews out of the fridge or freezer, let the container come to room temperature before opening it. This prevents condensation from forming on the cashews.

5. Buy the right size for your household

It is tempting to buy the biggest pack for the best value, but cashews that go stale are no bargain. A small family that snacks occasionally will be happiest with 250g or 500g. A household that cooks with cashews every week, or celebrates often, will get through 1kg comfortably. Businesses can move to 10kg and bulk packs, which should be stored in a cool room or cold store.

How to tell if cashews have gone off

Fresh cashews smell mild and slightly sweet, taste creamy and have a firm bite. Be careful if you notice any of the following:

  • A sharp, bitter, paint-like or soapy smell
  • A sour or stale aftertaste
  • Soft, chewy or damp texture
  • Any visible mould or dark spots

If a cashew tastes bitter or “off”, do not keep eating it, and discard the batch if several nuts are affected.

Quick checklist

Airtight container, cool and dark place, dry spoon, refrigerate big quantities. Follow these four habits and your cashews will taste as good on the last day as they did on the first.

Quick takeaways

  • Move opened packs into a clean, dry, airtight container
  • Keep away from heat, steam and direct sunlight
  • Use a dry spoon, never a wet one
  • Refrigerate large quantities and take out only what you need
  • Trust your nose: fresh cashews smell mild and sweet
